Maybe I’m just an old lady but I don’t really understand how brunch is a thing. “Brunch” for me is stuffing my face with some oatmeal and berries while standing AND also slightly turned so that my toddler cant steal my strawberries.

Now before you get the pitchforks, he gets his own fruit too, but this kid (like most kids) just loves the thrill of the steal.

Anyways, whenever I see brunch brought up in movies and T.V. shows I get kind of jealous, because I want to get my brunch on too! Hanging out with friends and acting fancy? Hell yes I want some of that!

Plus it looks like day drinking is totally socially acceptable when it comes to brunch. Just sayin’.

If you were to ask most mothers what is missing from their lives post-kids, 100 percent of respondents would say day drinking.

LOL just kidding it’s sleep. It’s always sleep.

Anyways, because I’m a hot mess with a million kids (I rounded up ok?) if I were to have a brunch I would have to get my friends to come to me. And because my friends are high quality folks with the most discerning of tastes I would have to be prepared to wow them with some next level Brunchables.

Matcha

I LOVE matcha. When I use matcha, I typically use it in a coconut milk matcha latte. Sometimes I even have a cold one because it is just sooo good.

I also love putting it in smoothies, or making mint matcha nice cream.

Matcha is powdery green tea which is super flavorful and has an almost buttery taste. Traditionally, matcha is consumed in a tea ceremony with special tools, such as a whisk and bowl.

There are different “grades” of matcha, the most common being ceremonial grade (so of good enough quality to be used for the Traditional Japanese tea ceremony) and culinary grade (this is what’s typically used for cooking, smoothies, etc.)

For this recipe I used the culinary grade Matcha from Kiss Me Organics.

The quality of this matcha really surprised me. When compared with the ceremonial grade matcha I have from another popular tea brand, the Kiss me Organics matcha tasted just as smooth and was brighter in color.

So, when I was thinking of ways that I could bring a little brunch into my life I came up with these beauties. I was trying to figure out a way to incorporate a little matcha into my Power Breakfast for Clean Eating formula, and these more than did the trick.

A Note about Coconut Whipped Cream

Coconut whipped cream is full of healthy fats, but it is important to still be aware of your portion sizes. I would use no more than 3/4 cup of this whipped cream. It is so deliciously rich you probably wouldn’t want much more than that anyways!

The method for this recipe used cans of FULL FAT coconut milk, but you can also use the Coconut Cream from Trader Joes if you have access to it. I am in Canada where we are deprived of this amazing luxury, but if you have a Trader Joes nearby I highly recommend this product.

Whipped Coconut Matcha Brunch Cups
These rich and decadent brunch cups are a perfect quick and easy addition to your next fancypants brunch party!

Matcha Coconut Milk Brunch Cups!
Instructions
  1. Leave the coconut milk in the fridge overnight upside down. Remove from the fridge and turn over, open with a can opener and drain the water. Use the thickened cream to whip.
  2. Put the coconut cream in a bowl and add honey and vanilla. Whip with a hand beater until the coconut cream starts to peak.

  3. Take Kiss Me Organics Matcha and make a paste with a couple of drops of water (take care to not put too much in- less is better!) in another bowl. Add this paste to the coconut cream and keep whipping until it is completely mixed.

  4. Take 1/3 of a cup of the coconut Matcha whipped cream and put in a martini glass. Garnish generously with fruit.

If you want a little extra flair, also sprinkle on some Qia Cereal for extra crunch!

    I am not a fan of brunch, I eat only specific few things for breakfast, and always sweet never savory, plus I don’t usually drink at night, let alone during the day 😉 . But I could easily polish off this whipped coconut cream matcha cup! So good!
