I think it’s safe to say that I have a new go-to lettuce. Which brings me to this recipe.

As far as recipes go, this one will be pretty basic. As a busy mom, it is important to make things as fuss free as possible without sacrificing taste. For the salad greens, I used a mixture of the Multi Leaf Trio and the Green Batavia from Inspired Greens. For the dressing I used a quarter of an apple, however if you have applesauce on hand that is even better (use 1/4 cup). This is one of the rare times I did not have applesauce on hand, however when you are living that sugar free life you pick up some quick hacks to sweeten your food easily. I simply popped the peeled quartered apple into the microwave for 1 minute to soften it up before blending. You could also achieve this by steaming or baking the apple.

While I never thought I would see the day that I would be eagerly eating up salad and lentils, this is where I am! It just goes to show that it is never too late to reclaim your health and transform your life!

This recipe was made in collaboration with Inspired Greens, but all opinions and impressions are my own.

Looks like a great salad for lunch or a side dinner. And that dressing – the apples seem like they would add such a great flavor profile. Pinning for later 😀
I’m also intrigued by the hydroponic grown living lettuce … it seems so interesting (I’ve been researching it on Pinterest)!
